  • 1 3/4 c. all-purpose flour
  • 1/2 tsp salt
  • 6 Tbsp. chilled unsalted butter cut small pcs
  • 5 Tbsp. chilled solid vegetable shortening cut small pcs
  • 2 Tbsp. ice water or possibly more if needed
  • 3 3/4 lb Granny Smith apples - (abt 10 med) peeled, cored, and thickly sliced
  • 1 Tbsp. fresh lemon juice
  • 2 1/2 Tbsp. unsalted butter
  • 1/3 c. sugar
  • 1 tsp grnd cinnamon
  • 2 Tbsp. apple cider
  • 1 Tbsp. cornstarch
  • 1/4 c. applesauce
  • 3/4 c. all-purpose flour
  • 1/2 c. sugar
  • 1/4 c. golden sugar - (packed)
  • 3/4 c. minced walnuts
  • 6 Tbsp. unsalted butter - (3/4 stick) cut small pcs
  • 1/4 tsp salt

Directions

  1. For Crust: Mix flour and salt in processor. Add in butter and shortening; using on/off turns, cut in till mix resembles coarse meal. Drizzle 2 Tbsp. ice water over. Process till moist clumps form, adding more ice water by teaspoonfuls if dry. Gather dough into ball; flatten into disk. Wrap in plastic. Refrigerate1 hour.
  2. Roll out dough between 2 sheets of plastic wrap to 14-inch round. Transfer dough to 10-inch-diameter glass pie dish. Fold overhang under. Crimp edges decoratively. Pierce bottom of crust all over with fork. Freeze crust 15 min. (Can be prepared 1 day ahead. Keep frzn.)
  3. Preheat oven to 350 degrees. Line crust with aluminum foil. Fill with pie weights or possibly dry beans. Bake 15 min. Remove weights and foil. Bake till golden brown and set, about 10 min longer. Cold.
  4. For Filling: Toss apples and lemon juice in medium bowl. Heat butter in heavy large skillet over medium-high heat. Stir in sugar and cinnamon. Add in apples; saute/fry till coated with cinnamon butter and crisp-tender, about 5 min. Whisk cider and cornstarch in small bowl. Add in to apples. Bring to boil, stirring constantly. Transfer apple mix to large bowl. Fold in applesauce. Cold completely. (Crust and filling can be made 1 day ahead. Cover crust; let stand at room temperature. Cover and refrigeratefilling.)
  5. For Topping: Preheat oven to 350 degrees. Using fingertips, rub all ingredients in bowl till moist clumps form.
  6. Place filling in crust. Sprinkle topping over apples. Bake till topping is golden, about 40 min.
  7. This recipe yields 8 servings.
