Ingredients

  • 1 c. Knotts Berry Farm Light Apple Cinnamon Syrup
  • 1 c. Warm water
  • 1 tsp Butter
  • 3 Tbsp. Cornstarch
  • 1 pch Salt
  • 2 x Egg yolks
  • 1 x Graham cracker pie crust
  • 2 x Egg whites
  • 1 Tbsp. Knotts Berry Farm Light Apple Cinnamon Syrup

Directions

  1. Combine syrup, warm water and butter and bring to a boil. Mix cornstarch, salt and sufficient cool water to make a thin paste, add in egg yolks and beat well. Add in cornstarch mix to warm syrup gradually, return to heat and cook till thickened to the consistency of pudding, stirring constantly.
  2. Cold slightly. Pour into pie crust. Beat egg whites stiff, adding slowly the Tbsp. of syrup. Pile on pie and brown in 400 F oven.
  3. Notes: The filling never thickened sufficient. Anything less than pudding consistency just doesn't work.
  4. Now, here is something Neil and I tried last night. It tastes something like apple pancakes to me... We still need to get the consistency of the filling right, but I think it may just be a matter of more corn starch.
