Ingredients

  • 1 2/3 c. Flour all-purpose
  • 1 1/2 ounce Cornmeal yellow uncooked
  • 1 Tbsp. Baking pwdr double-acting
  • 3/4 lb Apples cored, pared, finely minced
  • 1/2 c. Whole Kernel Corn, Frzn Thawed
  • 2 1/4 ounce Lowfat Cheddar Cheese shredded
  • 1/3 c. Sugar granulated
  • 1 dsh Cinnamon grnd
  • 1 dsh Nutmeg grnd
  • 6 Tbsp. Corn oil
  • 3 x Large eggs lightly beaten

Directions

  1. Preheat oven to 400F. Line 12 2-1/2" muffin-pan c. with paper baking c.; set aside. In large mixing bowl combine flour, cornmeal and baking pwdr. Add in apples, corn, cheese, sugar, cinnamon, and nutmeg, stirring to combine. In small bowl beat together oil and Large eggs; stir into flour mix. Fill each baking c. with an equal amount of batter. Bake in middle of even for 15 min, till golden brown and toothpick comes out dry. Set pan on wire rack and let cold.
