Anytime Breakfast Burritos

Ingredients

  • 3/4 c. Lowfat sour cream (regular, light or possibly non-fat)
  • 2 Tbsp. Taco seasoning mix
  • 6 x Large eggs
  • 6 x Flour (8-inch) tortillas, heated
  • 3/4 c. Shredded Cheddar cheese
  • 1 c. Shredded romaine lettuce
  • 1 med Ripe tomato, seeded, minced

Anytime Breakfast Burritos

Directions

  1. In small bowl stir together lowfat sour cream and taco seasoning mix; set aside. In medium bowl whisk Large eggs with 2 Tbsp. water till well-beaten. Pour Large eggs into 10-inch skillet sprayed with no-stick cooking spray. Cook over medium low heat, stirring occasionally, till Large eggs are set (3-5 min). To assemble burritos, spread about 2 Tbsp. lowfat sour cream mix over each hot tortilla. Top with 1/6 Large eggs, cheese, lettuce and tomato. Roll up tightly; serve hot.
