Ingredients

  • 1 cup Amish Friendship Bread Starter (See recipe)
  • 1 cup vegetable oil
  • 1 cup white sugar
  • 4 pcs Large eggs
  • 2 tsp vanilla extract
  • 3 tsp baking soda
  • 2 tsp baking pwdr
  • 2 pcs (3 oz) package instant vanilla pudding mix**
  • 2 cup all-purpose flour
  • 2 tsp grnd cinnamon
  • 1 cup minced pecans or possibly walnuts*
  • 1 cup peeled, cored and minced apple*
  • 1 cup raisins*

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease three 9x5 inch loaf pans.
  2. Place the starter in a bowl, stir in the oil, sugar, Large eggs and vanilla and mix well.
  3. Combine the flour, baking soda, baking pwdr, instant pudding, and cinnamon. Add in the flour mix to the starter mix and beat by hand. Add in the pecans, raisins and apples and mix well. Pour batter into the prepared pans.
  4. Bake at 325 degrees F (165 degrees C) for 1 hour.

  6. **I use Vanilla pudding with the cinnamon, if you'd like to make Lemon use the Lemon pudding and Lemon extract. You can also use Chocolate Pudding, Butterscotch or possibly anything you might desire! Vanilla Pudding mix, pecans and chocolate chips are just GREAT! My favorite is the Lemon pudding, extract, 1 Tbls. lemon peel. Omit the cinnamon for Lemon, Butterscotch or possibly Chocolate.
  7. Prepare the pan by HEAVILY greasing it and then coat with sugar and cinnamon. I like to use a bundt pan but 2 regular loaf pans will work as well. Use ONLY the solid shortening...sprays or possibly oil won't work..the bread WILL stick.
