Adrienne Barbeau's Yams

Ingredients

  • 7 lb Yams, boil tender, cold, peel
  • 1/2 c. Butter, divided use
  • 1 pch Salt
  • 1/2 tsp Pepper
  • 1/3 c. Honey
  • 1/2 tsp Nutmeg
  • 1/3 tsp Cinnamon
  • 3 x Pippin or possibly Granny Smith, apples - peel, core,
  • Thin
  • 1/4 c. Butter, cut squares

Directions

  1. Mash yams with 1/4 c butter,salt and pepper.
  2. Heat 1/4 c. butter with nutmeg and honey. Pour into bottom of casserole and layer with apples. Add in Mashed yams and top with cinnamon and 1/4 c. butter squares. Bake at 350F for 45 min till bubbling.
