Acorn Squash with Apple Cider Brown Sugar Maple Syrup Sauce Recipe

Who knew acorn squash was so delicious? Not me! I remember when I was a kid my mom always fixed this for her and my father. It was not something I liked at all. EVER! Until now. This was so easy and so delicious and I decided to add apple cider to my sauce and that made it even more delicious. Welcome to my house my new favorite squash!

Directions

  1. Preheat oven to 400 degrees. Cut the acorn squash in half and place in a baking dish. Score the squash on the inside with a knife (put several tiny punctures into the squash). Put the 1/2 cup of water in the bottom of the baking dish. Over medium heat melt the butter in a saucepan. Add the apple cider, maple syrup and the brown sugar. Stir for approximately 15 minutes until the brown sugar is completely dissolved. Remove from heat and pour into the cavity of the acorn squash. Take a pastry brush and dip into the sauce. Brush on the edges of the acorn squash before baking. Bake for 1 hour. Serves 2.
