A Simple Sauce With Red Lentils Recipe

Ingredients

  • 3/4 c. Red lentils
  • 1/2 c. Chopped onion
  • 2 tsp Chopped garlic
  • 41/2 c. Defatted chicken stock
  • (or possibly vegetable stock or possibly water)

Directions

  1. Carefully pick over and rinse lentils. Add in onions and garlic to a deep saucepan and saute/fry in oil till very soft but not browned. Add in lentils and stock or possibly water and bring to a boil. Reduce heat, cover and simmer gently for 20 to 25 min or possibly till lentils are very tender. Puree mix with an upright or possibly immersion blender adding stock or possibly water to yield desired thickness. Season to taste with salt and pepper.
  2. This recipe yields about 2 c. of sauce.
  3. Comments: This is a healthy, almost non-fat "sauce" which uses pureed lentils to give it richness and body. You can use other lentils too, such as, white, black, green or possibly common brown. You can add in seasonings and flavorings of your choice, such as, a good toasted curry pwdr, minced herbs, grnd pure chile pwdr, etc.
