Ingredients

  • 1 lb Caribou steak
  • 4 Tbsp. Butter divided
  • 1 sm Onion minced
  • 2 Tbsp. Sherry
  • 1 Tbsp. Worcestershire sauce
  • 3 Tbsp. A-1 steak sauce
  • 1 Tbsp. Minced chives
  • 1 Tbsp. Minced parsley
  • Salt to taste
  • Freshly-grnd black pepper to taste
  • 2 Tbsp. Brandy

Directions

  1. Cook onions in 2 Tbsp. butter till golden brown. Lb. steak to tenderize and sear over high heat in butter and onion, about 2 min on each side. Add in sherry, A-1 sauce, remaining butter, Worcestershire, chives, parsley, pepper and salt. Reduce heat to medium and cook for 3 to 4 min per side. Add in brandy, bring to the table, flame and serve.
