7 Day Sweet Pickles

Ingredients

  • 7 lbs. cucumbers
  • water to cover
  • 1 qt vinegar
  • 8 c. sugar
  • 2 Tbsp. salt
  • 2 Tbsp. mixed pickling spices

Directions

  1. Wash cucumbers and cover with boiling water. Allow to stand for 24 hrs, then repeat this process daily using fresh boiling water till the fifth day. On morning number 5, slice cucumbers into 1/4 inch thick rings.

        There was a lot of process missing from the recipe, this is how I completed my batch, I've been canning most of my life, the rewards are well worth the effort and really it ie time intensive but not difficult.

        Put your Cucumbers in mason jars leaving 1 in of space at the top, put jars in a water bath and bring to a gentle boil, add the1 while this is working put the vinegar mixture on a medium low fire, you want this hot but don’t boil it. Now gently pour the hot pickling solution over the sliced cucumbers and be sure all slices are completely covered, leave in water bath 2 1/2 min, check that all pickles are submerged.
        Now you can pull the mason jars from the water bath, immediately put sterilized lids on your mason jars, as they cool you will notice that the domed center of the lid is concave indicating a vacuum in the jar, now put the rings on and tighten.

        This is how I put up my Hungarian Hots,Thai Chilies, Habaneros and Ganadera.
        for the sweet pickles I added 1 Thai Chili and 2 garlic cloves to the pickling solution, just for a twist

          After the 5th day of throwing over hot water and you have sliced the cucumbers .
          WHAT HAPPENS
          What do you do with the viegar and sugar ?
          I take it it is then bottled ? How long does it last in the bottle ?
