Baked Penne with Sausage & Ricotta

Baked Penne with Sausage & Ricotta by Denise Sherin

This bakes up like lasagna or baked ziti. It's simple to make and everyone loves it. It's great for a dinner or potluck. My sister-in-law frequently asks me to bring this to her parties and it's always a big hit!

Cool and Creamy Ranch Cucumber Salad

Cool and Creamy Ranch Cucumber Salad by Denise Sherin

This is a simple as 1-2-3. Only a few ingredients and a quick 30 minute chill and you are good to go. Great way to use up extra cucumbers. And it's a nice side to BBQ. Cook time is actually chill time.

Penne Alfredo with Italian Sausage and Zucchini

Penne Alfredo with Italian Sausage and Zucchini by Denise Sherin

In this picture I used just zucchini but I have made it with summer squash or a mix of both, whatever I have on hand, and it's great.

It turned out that we really liked it as a different type of slaw. My son can't get enough of it, so we will be making it again.

Stuffed Peppers - Mexican Taco Style by Denise Sherin

Stuffed Peppers are so easy to change up flavor wise. These are made with a Mexican taco flavor. I used cous-cous instead of rice because my son doesn't really like rice. But you can use rice, cracked wheat or quinoa whatever you like. I also use mild chilies but for a spicier dish you could use jalapenos. For the meat in this…
