I am going to a Mom's back to school brunch tomorrow and I still have about 2 pounds of dry farmed tomatoes from Sunday's Market (never got around to making tomato jam). I will make a tomato tart with fresh thyme and my home made goat cheese.
Dry farmed tomatoes are really sweet, on the small side and slightly thick skinned, which will be perfect for a tart. The sweetness will make for great caramelization and the thicker skin will help them keep their shape.
