Newbie needs everyones help

My rheumatologist has placed me on the Eat to Live way of eating. I am going to the store Wednesday to buy groceries. My concern is being able to fix the veggies in enough different way to not get burnt out on them. Do any of you juice the veggies or fruit?

Hi Wilma,
I make a fruit smoothie every day that now includes veggies. Essentially, it is this smoothie, but I now add a cup of frozen spinach and two Tbsps of Spirulina or Chlorella (dark green powdered seaweed). It makes for a really healthy breakfast that is huge in nutrition per calorie.
The reason I do smoothies instead of juicing is that juicing gets rid of much of the healthy fiber and micro-nutrients in the fruits and veggies.
I have a lot of vegetable recipes posted too.

Thank you for the reply John. I was juicing but realized i was loosing nutrients so I started doing smoothies. I started with just fruit ones but now I am adding carrots, celery, spinach etc. I really like them. I will give the sea weed a try next time i go to town.

Here is a great recipe for a vegan red lentil soup. It is super delicious. When I went vegan about 2 months ago I asked my 16 yr old to try to find recipes he might like and he came across this recipe. I typically eat it with a spinach/strawberry/walnut/raspberry dressing salad.

I do not put the cilantro as I am not a fan and I always double it so there is plenty for lunches and it freezes well.

I find it easier to make a bunch of soups or casseroles in one day and freeze them, simply because sometimes if I'm tired it seems like it would be so much easier to just grab a roasted chicken or something fast from the grocery store so that I don;t have to cook. I am also going to be starting the diet next week. I am confused about some of these recipes. They have oil and dairy in them. One is a half cup of olive oil. I thought that was off limits? Or just for the first 6 weeks.
