About me
When you share a meal with a southerner, it is so much more than us just feeding you - we are sharing our love for you through our food! Food. Family. Memories. That is what southern food is about and Deep South Dish is basic, country style southern cookin' from The Deep South, with an emphasis on Cajun & Creole recipes. You'll see me refer to "The Cajun" on my site. That's my husband and with family in New Iberia, Louisiana - the heart of Cajun country - you know I better do that right! I am southern born and reared from parents who were southern born and reared. I grew up and spent my entire life here on the Mississippi Gulf Coast or in New Orleans, Louisiana so I also create and cook a lot of coastal southern seafood dishes, and while I do use some shortcuts and that good ole southern Béchamel (a/k/a cream of mushroom soup for you non-southerners, gasp! I know!) and Velveeta, and Little Smokies sausages from time to time, most often I cook from scratch. Though I am no expert by any means, sometimes I even venture out on the grill (gas grill y'all... sorry no official BBQ smoking goes on here - too dang time consuming.) I am not professionally trained, I am not a chef, I have no culinary education or training. I am simply a home cook, plain and simple and I make the same mistakes that you do. Everything that you see presented here has been cooked by me, in my own kitchen, and eaten by my family and me (just ask my hips!) and all of the photography is my own, unless credited otherwise. Some of my recipes are adaptations of recipes I see and like, some are old time classics that have been around for ages, many are old family favorites of my Mama's or my Grandma's that I have recreated or that were passed down, but many more are my own original creations. Cooking Influences
My mother and my grandmother were where I learned to cook, but it wasn’t at the elbow of either. They both grew up in a time when children had their place, and it wasn’t in the kitchen, so both preferred to cook without children, or anyone else for that matter, underfoot. I quietly stood by and observed though, and apparently that was enough to pick up a few things because I went straight from my parent’s home to my marriage home just before I turned 20, and started cooking right away. I guess you could say I've had plenty of trial and error to hone my skills. I was employed as a corporate paralegal when Hurricane Katrina hit our Gulf Coast in 2005 and took away the job I'd held for 12 years. That is when my blogging was born and I really spent more time in the kitchen than ever before. That goes to show you, it’s never too late to get in the kitchen!
