I created this on a whim and found out my whole family likes (loves?) it.

Ingredients

  • Four cans Royal Prince Yams (save all syrup) from Stater Brother’s market
  • 2 pounds of ground beef
  • 2 cups grated sharp cheddar cheese lightly packed
  • 1 1/2 cups Betty Crocker Instant Potato Buds
  • 1 teaspoon salt

Directions

  1. Brown ground beef and drain grease.
  2. Add last four ingredients plus 1 cup of the syrup.
  3. Mix well and put in 13 x 9 inch greased glass casserole.
  4. Slice yams into small pieces and beat together with the rest of the syrup until smooth (like baby food).
  5. Spread over top. Cover with plastic wrap.
  6. Heat in microwave oven until hot; about 10-20 minutes.
  7. May garnish with parsley after heating.

    Great recipe, most delicious, after a little searching I discovered the size of the Royal Prince Yams at 9oz. (It would have been nice to include, not everyone has access to a Stater Bros. Market). I hope the substitution of Bruce's Yams 40oz (one can) will yield as delicious results.
