I've tried a lot of white cupcake recipes. Many turn out too flat or dry. I came across this one on a blog site and it's really good. It looks like an adaptation of the Magnolia bakery recipe but I'm not sure. Either way, it's good!

Directions

  1. 1. Beat butter until softened. Add sugar and beat until light and fluffy, about 3 minutes.
  2. 2. Add eggs, one at a time, beating until well combined.
  3. 3. Measure the flour, baking powder, and salt into a medium bowl and whisk to combine.
  4. 4. Measure out the milk and vanilla and stir to combine.
  5. 5. Add about a third of the dry ingredients to the butter/sugar and beat to combine. Add about a half of the milk/vanilla and beat to combine. Continue adding, alternating between dry and wet and finishing with the dry.
  6. 6. Scoop batter into cupcake cups about 2/3’s full. Bake at 350 degrees for about 22-25 minutes or until a cake tester comes out clean.

              I had a chance to whip up your vanilla cupcakes with a touch of Kahlua liquor.
              Absolutely delicious!!!
              I also decided to make them in my mini-muffin pan for little less guilty bites.
              Now, how many did I eat...I think I must have lost count while everyone else was doing the same;o)

                    I just made this recipe. It is very close to the Crave vanilla cupcake. I have been looking for a cupcake with the texture (denseness) of Magnolia's but without the self-rising flour taste. Magnolia's has been my standard for the last 4 years, but this cupcake is better.

                                          the cupcakes look very good, but i do not see where i am supposed to use the vanilla bean. nor does it specify which part. i can assume that i am using the seeds and adding them to the milk, but i want the cakes to come out perfectly. can you provide a little further directions on that part? thanks a million.

                                            Hi LaJuana - the recipe calls for vanilla extract, not vanilla bean. Step 4 says to combine the milk and the extract. Hope it works out perfectly for you!

                                              the last ingredient is 1/2 of a vanilla bean with the seeds scraped out... I'm confused too. Also - where do you get vanilla sugar?
