  • 3 c. cool rice
  • 1 (15 ounce.) can pinto beans, rinsed & liquid removed
  • 1 (15 ounce.) can black beans, rinsed & liquid removed
  • 1 (10 ounce.) pkg. frzn peas, thawed
  • 1 c. sliced celery
  • 1 med. red onion, minced (1/2 c.)
  • 2 (4 ounce.) cans green chili peppers, liquid removed
  • 1/4 c. snipped cilantro or possibly parsley
  • 1 recipe Garlic dressing (follows) or possibly 1 (8 ounce.) bottle or possibly jar Italian dressing

Directions

  1. In a 2 1/2 qt covered container combine cooked rice, pinto beans, black beans, peas, celery, onion, diced green chili peppers and 1/4 c. cilantro or possibly parsley. Add in dressing to rice mix; toss gently to mix. Cover and refrigerateseveral hrs. (Special Note: If purchasing store bought salad dressing, "Paul Newman's" oil/vinegar dressing is recommended.)
