Texas Straw Hats

Ingredients

  • 1 c. onion, minced
  • 2/3 c. celery, minced
  • 2/3 c. green pepper, minced
  • 3 tbsp. oil
  • 2 lbs. grnd beef
  • 2 to 3 teaspoon chili pwdr
  • Salt to taste
  • 1/4 teaspoon pepper
  • 2 (6 ounce.) cans tomato paste
  • 1/2 c. ketchup
  • 2 c. water
  • 2 teaspoon Worcestershire sauce
  • Dash of Tabasco sauce
  • Tostada chips (or possibly nacho chips)
  • Cheese, shredded

Directions

  1. In large skillet, cook onions, celery and green pepper in oil till tender. Brown beef separately. Drain. Mix beef with onion, celery and green pepper. Add in remaining ingredients except chips and cheese. Simmer, uncovered, for about 1 hour, stirring occasionally. Serve on chips. Top generously with cheese. Serves 6.
