Ingredients

  • 1 c. butter
  • 1/2 c. granulated sugar
  • 1/4 c. light brown sugar
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 2 1/4 c. all-purpose flour
  • 1/2 c. finely minced pecans
  • Sugar for rolling cookies

Directions

  1. Cream butter and sugars till light and fluffy. Beat in egg yolk and vanilla. Stir in the flour, half a c. at a time, blending well. Stir in the flour, half a c. at a time, blending well. Stir in pecans. Roll into 1-inch balls. Roll in sugar.
  2. Place on ungreased cookie sheet. Press with bottom of a glass to 3/8 inch thickness. Bake at 350 degrees for 10 min. Lower heat to 300 degrees. Bake cookies 12 min longer till just light brown on bottom. Cold a minute before removing to a rack to complete cooling. Store airtight.
