Tex-Mex Breakfast Pizza

Ingredients

  • 2 small potatoes, diced
  • 2 tbs. diced onion
  • 3 eggs
  • 6 pieces bacon
  • 1/2 tbs. chopped chives or cilantro
  • 1 tomato, sliced
  • 2 oz. cream cheese
  • 1 cup shredded cheese (pepper jack is good)
  • 1/3 cup salsa
  • 1 pizza shell, 10 inches
  • optional: diced jalapenos

Tex-Mex Breakfast Pizza

Time: 20 minutes prep, 20 minutes cook
Servings: 6
 

Directions

  1. Heat oven to 450 F.
  2. Arrange the pizza dough in a round, oval or rectangular shape in a pan.
  3. Fry the bacon, reserving fat.
  4. Fry the potatoes and onions until golden brown, add cilantro.
  5. Scramble in the eggs and salt and pepper to taste.
  6. Brush the salsa on top of the dough.
  7. Add the scramble eggs and potatoes.
  8. Dot the pizza with dollops of cream cheese.
  9. Place tomato slices on top, followed by bacon slices arranged in a wagonwheel shape.
  10. Sprinkle on cheese and bake 12 minutes.
