INGREDIENTS

Makes 10 to 15 paniyarams

Total Preparation Time - 20 to 30 minutes

Then add water little by little and mix well until it it becomes a smooth batter and has the consistency of dosa batter. See that it is not too runny nor very thick.

Keep this batter aside for 10 to 15 minutes.

After 15 minutes take the batter and mix well with a ladle for 2 minutes. This will help the sugar to get evenly mixed with the batter.

Now place a frying pan on flame and pour oil into it. Check the oil to see if it is ready for frying the paniyarams, for this drop a small piece of batter into the oil, if it settles in the bottom it shows that the oil is not ready. If it comes up immediately it means the oil is ready, if the batter comes up and browns immediately it shows that the oil is too hot.

After the oil heats up scoop a spoon full of batter and pour it into the oil gently.

Then after the batter puffs up, slowly turn sides and wait until it turns brown on both sides.

Once it browns up remove from flame and place on a tissue paper to absorb excess oil.

Serve!!

Heart shaped paniyarams:

To prepare heart shaped paniyarams, place a heart shaped cookie cutter in hot oil and then pour a spoon full of the prepared batter into the cookie cutter. Pour until the cookie cutter is filled up.

Then after few minutes flip the cookie cutter gently and leave undisturbed for a minute.

Then remove the cutter from flame and place on a plate. After it cools down, slide a knife into the sides of the cutter and slowly push the paniyaram using your fingers. It will slide out very beautifully.

Now take these shaped paniyarams and fry again in hot oil, turn sides and wait until it browns evenly. Fry on a low flame so that the paniyarams gets cooked evenly.

When done remove from flame and place on a tissue paper to absorb excess oil. Then serve.

TIP 1: If you want bigger paniyarams use a big ladle to pour the batter into oil. I used a spoon and made smaller ones because it gets cooked quick and evenly.

TIP 2: You can also add some rava/sooji to the batter to make it more crispier.

TIP 3: You can also make the same with wheat flour, but it will be more dense than he maida paniyarams.

TIP 4: I have added moderate amount of sugar only, if you want the paniyarams to be more sweeter add more sugar. You can taste the batter to check sweetness.

TIP 5: You can use different shaped cookie cutters, but do not use plastics. I have used a clover shaped cutter too you can see the pic.

TIP 6: To get perfect shaped hearts, be patient and pour batter till the rim of the cookie cutter.

Super delicious, crispy and soft paniyarams are ready!! Serve as snack!! Serve those heart shaped paniyarams for your loved ones on valentine's day!!
