Ingredients

• 3 tablespoons olive oil, divided
• 2 teaspoons plus 1 tablespoon smoked paprika, divided
• 1 1/2 pounds potatoes, peeled and diced
• 1 small onion, diced
• 3 cloves garlic, minced
• 2 teaspoons dried oregano
• 2 teaspoons cumin
• 1/8 teaspoon red pepper flakes
• 1/4 cup dry sherry
• 2 cups vegetable broth
• 1 28-ounce can crushed tomtoes
• 1 15-ounce can diced tomatoes
• 2 tablespoons orange juice
• 2/3 cup sliced green olives (unstuffed)
• 1/4 cup chopped parsley
