Spanish Sardines and Olive Oil Pasta

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons reserved oil from bottled sardines
  • 1 tablespoon minced garlic
  • 1/4 cup diced tomato
  • 1 cup flaked Spanish sardines
  • 5 cups cooked capellini pasta
  • salt and pepper, to taste
  • 8 sardine fillets for garnish

Spanish Sardines and Olive Oil Pasta

 
 

Directions

  1. In a large sauté pan, heat olive oil and oil from sardines.
  2. Sauté garlic until fragrant.
  3. Add diced tomatoes and toss quickly.
  4. Add flaked sardines and cook for a minute.
  5. Toss in cooked capellini pasta.
  6. Season with salt and pepper.
  7. Place two sardine fillets on top to garnish.

    I have not seen bottled sardines. They look better than the ones in small cans.
