smoked turkey and cabbage

Ingredients

  • 10 lbs chunky cut smoked turkey
  • 1 quart chopped onions
  • 5 lbs fresh chopped and shredded cabbage
  • 2 1/2 lbs partially cooked cubed potatoes
  • 1/4 cups seasoned salt
  • 2 Tbsp crushed caraway seeds
  • 1/4 cup black pepper
  • 1/4 cup paprika
  • 1/4 cup turkey base mixed in 2 cups off
  • 1 quart sour cream
  • 1/2 cups minced fresh parsley

Directions

  1. Heat tilt kettle to 350 F. THIS ITEM MUST BE BATCH COOKED
  2. Add oil, onions and cabbage and saute at high heat until cooked 1/2 way.
  3. Add the cubed potatoes, crushed caraway seeds and cook for 8-10 minutes longer.
  4. Add the turkey stock, pepper and paprika and heat to boiling.
  5. Add the sour cream.
  6. Reduce heat and adjust taste.
  7. Pan up for service with parsley garnish.
