Seafood Stuffed Bell Peppers

Ingredients

  • 3 sm Green peppers
  •     Paprika
  • 1/2 c. Chicken broth
  • 1 Tbsp. Oil, (1-2 Tablespoons)
  • 1/4 lb Fish filet,(rock cod butter fish, red snapper)
  • 8 x Shrimp, medium sized shelled & deveined
  • 1 x Green onion stalk, mince fine
  • 1/2 tsp Salt
  • 2 dsh White pepper
  • 1 sm Egg white
  • 1 tsp Cornstarch
  • 1 tsp Cornstarch
  • 1/2 c. Chicken broth
  • 1 tsp Light soy sauce
  • 1/2 tsp Sesame oil
  • 1/2 tsp Sugar

Directions

  1. PREPARATION: Mince shrimp with fish and green onion till texture is a fine paste. Add in remainder of seafood mix and mix well. Wash and cut bell peppers in halves lengthwise. Seed them but don't wash the inside (stuffing will adhere better). Cut each half into quarters.
  2. Fill with seafood mix. Lightly sprinkle with paprika pwdr.
  3. Cook sauce mix in a separate sauce pan. COOKING: In a 10 inch or possibly 12 inch skillet, heat 1 or possibly 2 tbsp. oil at medium high heat. Brown stuffed pepper, filling side down, for 1 minute or possibly a little longer till slightly brown. Add in 1/2 c. chicken stock and turn stuffed pepper filling side up. Continue cooking at medium high heat for 2-3 min. (If broth evaporates too fast, add in a little more. There should be very little broth left.) Add in the cooked sauce mix. Heat for another minute or possibly so till sauce is bubbly. Transfer stuffed peppers to serving platter an d pour sauce over them. Serve warm. DO AHEAD NOTES: Do through preparation.
  4. COMMENTS: The stuffing can be made entirely of fish.
  5. Ms. Yee finds the shrimp give it extra flavor. If you would like to spice up the sauce, add in 1/2 to 1 teaspoon chili oil and 1/2 teaspoon vinegar to the mix. Wow!
