Ingredients

  • 4 cans any canned bean
  • 2 lbs 8 oz cooked salt pork or bacon cubes
  • 1/4 cup bacon fat
  • 3-4 Pods chili peppers
  • 2 Cans green chilis
  • 2 qts tomatoes, canned
  • 8 oz onions, sliced
  • 2 clove garlic, chopped
  • 1 oz salt
  • 1 Tbsp black pepper
  • 1/4 cup cayenne
  • 1/4 cup cumin

Directions

  1. Drain and rinse beans.
  2. Add salt pork/bacon to beans.
  3. Soak chili peppers in warm water.
  4. Remove pulp from pods and add to beans.
  5. Add tomatoes and other seasonings.
  6. Cook all ingredients in kettle for 4 hours or pour into 12x20x4 inch baking pan and bake 300F for 4-5 hours.
