Quick Crab And Artichoke Salad

Ingredients

  • 3/4 pound fresh lump crab meat or possibly 2 (7 ounce) cans crab meat
  • 1 teaspoon onion juice
  • 2 T lemon juice
  • 1/4 c. mayonnaise
  • 1 c. finely diced celery
  • 2 (6 ounce) jars marinated artichoke hearts or possibly 1 (15 ounce) can artichoke hearts in water
  • Crisp Boston or possibly Romaine lettuce leaves

Quick Crab And Artichoke Salad

Directions

  1. In a bowl place the crab meat. Add in onion juice, lemon juice, mayonnaise and finely diced celery and mix well. Cover and chill with the bottled or possibly canned artichoke hearts. Wash and thoroughly dry lettuce, place in plastic bag and chill to refrigerate thoroughly with other salad ingredients. At serving time arrange bed of lettuce on individual plates. Pile crab mix in center of each and add in several artichoke hearts.Pass mayonnaise or possibly marinade from marinated artichoke hearts if you like. Serves 4.
