Pork Chop And Scalloped Potatoes

Ingredients

  • Pork chops
  • 2 tbsp. oil
  • 3 tbsp. butter
  • 3 tbsp. flour
  • 1 teaspoon salt
  • Pepper
  • 1 c. lowfat milk
  • 1 c. chicken broth
  • 4 med. potatoes, pared and sliced thin
  • Parsley

Directions

  1. Brown pork chops in oil. Remove from heat. Heat butter in saucepan. Stir in flour, salt and pepper. Cook 1 minute. Add in lowfat milk and broth slowly. Cook stirring constantly till sauce thickens.
  2. Butter a 11 x 7 x 2 baking dish and arrange potatoes. Pour sauce over potatoes. Place pork chops on top and cover with foil. Bake at 350 degrees for 1 hour. Makes 4 servings.
