Pickled Red Onions w/Ginger and Spices

Ingredients

  • 1 lb red onions sliced not to thin {2 med. or 1 lg. }
  • 11/2 cups cider vinegar
  • 1/4 sugar
  • spices
  • 5 thin slices of fresh peeled ginger root
  • 5 whole cloves
  • 1 bay leaf
  • 1 star anise
  • 1/4 tsp mustard seeds
  • dash red pepper flakes

Pickled Red Onions w/Ginger and Spices

 
 

Directions

  1. Blanch onions in boiling water for 2 minutes then drain.
  2. In another saucepan combine vinegar,sugar and spices. Bring to a boil then reduce heat and simmer covered for for 5 minutes.
  3. Add blanched drained onions and simmer an additional 2 minutes.
  4. Transfer to glass jars. Let stand until totally cooled.
  5. These will last for weeks in the refrigerator.
