%20the%20first%20thing%20I%20do%20every%20morning,%20I%20get%20to%20start%20drooling%20over%20planning%20delicious%20meals%20right%20away.%20Luckily%20my%20cousin%20also%20mentioned%20the%20name%20of%20the%20restaurant%20in%20her%20picture%20and%20I%20was%20easily%20able%20to%20stalk%20the%20menu%20and%20find%20out%20more%20about%20this%20delicious%20meal.%20I%20read%20the%20description%20and%20was%20almost%20instantly%20in%20love.%3C/p%3E%3Cp%3EProsciutto,%20Pear%20&%20Parmesan%20Salad%3C/p%3E%3Cp%3EProsciutto%20ham,%20fresh%20rocket,%20toasted%20pine%20nuts,%3C/p%3E%3Cp%3Esliced%20juicy%20pear%20and%20grated%20aged%20parmesan%3C/p%3E%3Cp%3Ewith%20a%20strawberry%20and%20balsamic%20dressing.%3C/p%3E%3Cp%3EI%20had%20everything%20on%20hand%20and%20set%20about%20making%20this%20bad%20boy%20right%20away.%20I%20took%20a%20few%20liberties%20of%20my%20own%20(NO%20pine%20nuts%20here!%20Yuck!)%20and%20had%20to%20imagine%20what%20the%20dressing%20might%20be%20like,%20but%20the%20end%20result%20was%20beyond%20anything%20I%20could%20have%20imagined.%20I%20think%20this%20the%20perfect%20type%20of%20salad%20for%20this%20time%20of%20year.%20There%20is%20a%20great%20combination%20of%20sweet%20winter%20and%20spring%20fruits,%20which%20are%20amazing%20with%20the%20salty%20prosciutto%20and%20the%20toasted%20almonds%20add%20a%20perfect%20crunch.%20And%20the%20very%20best%20part!%20It%20took%20less%20than%20ten%20minutes%20to%20put%20together!%3C/p%3E%3Cp%3EApart%20from%20switching%20disgusting%20pine%20nuts%20for%20almonds,%20I%20had%20to%20guess%20what%20kind%20of%20dressing%20was%20used.%20Personally,%20I%20am%20not%20a%20fan%20of%20oily%20or%20sweet%20vinaigrettes,%20so%20when%20I%20came%20across%20this%20recipe%20from%20Whole%20Foods,%20I%20thought%20it%20would%20be%20perfect!%20I%20added%20some%20chia%20seeds%20to%20the%20dressing%20for%20some%20extra%20nutritional%20value.%20This%20dressing%20is%20best%20made%20with%20strawberries%20that%20have%20been%20sliced%20for%20a%20bit%20(so%20they%20can%20get%20kind%20of%20sweet%20and%20syrupy%20in%20their%20natural%20juice)%20or%20strawberries%20that%20are%20over%20ripe%20(like%20the%20day%20before%20you%20might%20have%20to%20toss%20them).%20%20Strawberries%20like%20that%20will%20be%20the%20juiciest%20and%20sweetest,%20which%20will%20cut%20the%20need%20for%20added%20sweeteners%20or%20oil.%3C/p%3E%3Cp%3EPear,%20Parmesan%20&%20Prosciutto%20Salad%20with%20Strawberry%20Balsamic%20Dressing%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EFor%20the%20Salad:%3C/p%3E%3Cp%3EIn%20a%20food%20processor%20combine%20all%20the%20ingredients%20for%20the%20dressing%20and%20mix%20until%20smooth.%20Set%20aside.%3C/p%3E%3Cp%3EWash%20your%20arugula%20and%20place%20in%20large%20bowl.%20Add%20dressing%20and%20toss%20until%20well%20mixed%20(I%20used%20about%201/3%20cup).%20Add%20almonds%20and%20grate%20parmesan%20to%20taste.%20Toss%20again.%3C/p%3E%3Cp%3EPlace%20arugula%20on%20large%20serving%20platter,%20top%20with%20prosciutto%20and%20pear%20slices.%20Add%20salt,%20pepper%20and%20parmesan%20to%20taste.%20Serve%20and%20enjoy!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
