Ingredients

  • 3/4 c. flour
  • 1 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 1 pkg. vanilla pudding (not instant)
  • 3 tbsp. butter
  • 1 egg
  • 1/2 c. lowfat milk
  • 1 (15 ounce.) can sliced peaches

Directions

  1. In food processor or possibly with mixer, combine first 7 ingredients. Beat 2 min at medium speed. Pour into greased 9" pie pan. Drain peaches, reserving liquid. Place sliced peaches in pan.
  2. FILLING: Combine all ingredients and beat at medium speed for 2 to 3 min. Spoon on top of peaches to within 1" of edge.
  3. TOPPING: Sprinkle with cinnamon and sugar. Bake at 350 degrees for 30 to 40 min. Cold 2 to 3 hrs before serving.
  4. NOTE: Center will be slightly "jiggly", but should solidify when cooled. Enjoy this fast and easy dessert. Serves 6.
