I think I had them at some sort of party and they were served as an appetizer. They were just the best salty, cheesy, crunchy bite! After that lovely experience, I decided to start making them at home. Now, you can purchase them at the store but honestly, why would you. They bake in eight minutes, you can add a few other ingredients if you want AND they are so much less expensive than store bought. All of these reasons are enough for me! One of the reasons these cheese crisps are so popular at my house is because they can be served on so many occasions. They are must for entertaining whether we’re having a party or just a few friends over for drinks. They are an excellent addition to a cheese or charcuterie board because they deliver big flavor and crunch.  I also serve them with soups and stews as an alternative to crackers or bread. When I make a big salad for supper, these crisps are the perfect addition to the meal. I make a double and sometimes triple batch because they store so well in an airtight container until we’re ready to enjoy them. I did say this recipe only has one ingredient but actually, sometimes I add a few other special touches just for kicks. Red pepper flakes are my go to when I’m looking to add a little heat. I’ve also added herbs like thyme and rosemary. I chop up the herbs, mix them into the cheese before scooping out onto my sheet pan. The possibilities are endless as to what you can do with this recipe! All you need is a little creativity. Line a sheet pan with parchment or baking mat. Scoop 1 tablespoon of shredded cheese onto the sheet pan. Bake for 8 minutes, until edges of cheese are golden. Remove pan from oven and let crisps cool on pan for 3 minutes.
