Oatmeal, Chocolate Chip and Raisin Cookies Recipe

I replaced half of the fat with applesauce in this recipe, and together with the spices and vanilla, this cookie is one word - yummy.

Directions

  1. Set oven to 350 degrees. Spray 2 cookie sheets with vegetable spray; set aside..
  2. In a large mixing bowl, beat together the granulated sugar, brown sugar, butter, and eggs til well mixed, about 2 minutes.
  3. Add applesauce, cinnamon, cloves, baking soda, baking powder and vanilla and mix 1 minute more.
  4. Stir in oats, flour, chocolate chips and raisins.
  5. Drop by rounded tablespoons 2 inches apart on prepared pans.
  6. Bake 10-12 minutes until golden brown. Remove from cookie sheet and cool on wire rack.

    Right out of the oven and transferred to the rack to cool, these were a little too soft and crumbly for me. So I let them stay on the rack to "recover" a couple hours, then stored in a container with the lid slightly ajar. That did the trick. They are no longer crumbly and each day since they remain a nice somewhat soft oatmeal cookie. I like the balance of spices and chocolate chips/raisins.
    I've cooked/tasted this recipe!
