New York Style Spinach & Goat Cheese Pizza

Ingredients

  • 1 New York Style Pizza Crust
  • 4-6 tablespoons good marinara (I used Trader Joe's tomato basil)
  • 1-2 Tbsp mozzarella cheese
  • 3-4 Tbsp goat cheese
  • 1 Tbsp Parmesan cheese
  • 4-6 oz fresh spinach
  • 2-3 cloves garlic, sliced
  • Sprinklings of bread crumbs or corn meal

New York Style Spinach & Goat Cheese Pizza

Time: 10 minutes prep, 20 minutes cook
Servings: 2-3
 

Directions

  1. Preheat oven to 425-450 F and place a pizza stone in it with a sprinkling of bread crumbs or corn meal.
  2. Place 12 inch pizza crust on a pizza pan or cookie sheet with sprinklings of bread crumbs or corn meal. Fold the edges under slight to form a pillow around the edge.
  3. Blanch the spinach in boiling water for a minute, then remove to a strainer, run cold water over it, and press to strain as much water as possible.
  4. Spread the marinara evenly around the pizza right up to the edges. It should form a thin but even spread. If not, add more to your liking.
  5. Spinkle on the mozzarella cheese. Add the garlic slices. Add the spinach throughout the pizza in dollops. Then dollop the goat cheese in between the spinach mounds to form an appetizing checkered look. (In the picture we left goat cheese off one quarter of the pizza because one of our friends doesn't like it!)
  6. Sprinkle on the parmesan cheese, and then place in the oven on the middle shelf and cook for 10-12 minutes. Remove the pizza from the pizza pan or cookie sheet and place it on the pizza stone and cook for another 5-6 minutes or until the pizza crust is golden brown but not burned.
  7. Remove from oven, let sit for 5 minutes, then slice and serve with extra parmesan and crushed red pepper on the table. Yum!

This is the pizza we made for the adults. It was fantastic! It reminded me so much of the pizza Nancy and I used to get from a small by-the-slice place in Hoboken, NJ when we were living in Weehawken. Very fond memories and very good pizza!
