My Crockpot Turkey à la King

This is an fuss-free Turkey à la King recipe made in a crockpot for a group of 12 or more people. The key is to prepare everything ahead of time. Cook a turkey, de-bone, reserve the meat and the drippings. Make the à la King sauce (recipe below) by combining the ingredients for the sauce and adding the turkey to your crockpot and letting it simmer on low for 6 to 7 hours or on high for 5 to 6 hours. It can be served on patty shells or on white rice. Easy, creamy, delicious and fuss-free.

Ingredients

  • 4 to 5 cups cooked turkey (cut in bite-size pieces) ahead of time
  • SAUCE
  • 2 cups of the turkey drippings (or chicken broth) reserve when cooking the turkey
  • 2 cups of fresh mushrooms (sliced)
  • 3 (10 3/4 ozs) cans cream of mushroom soup
  • 2 - 500 ml of 15% cream (thick cooking cream)
  • 2 cups of whole milk (add a bit more if too thick)
  • 1 1/2 cup celery, diced
  • 1 1/2 cup carrots, diced
  • 1 onion, diced
  • 3 cloves of garlic, chopped
  • 1/2 cup pimiento stuffed olives, sliced (optional)
  • Salt and pepper to taste
  • 1 tsp poultry seasoning
  • To add during last hour of cooking add
  • 4 tbsps cornstarch mixed with 1/4 cup water or Knorr Veloutine or your favourite thickerner (to thicken sauce)
  • 1 (10 3/4 ozs) can green peas, drained

Directions

  1. Cook the turkey ahead of the planned supper. De-bone and reserve the meat in the refrigerator and cut-up in bite-size pieces. Reserve the turkey drippings. The day of the planned supper, make the à la King sauce by placing all the sauce ingredients in your crockpot with the cut-up turkey (except the peas) in the morning and cook on low until suppertime. Add the peas and the cornstarch or your favourite instant thickener agent 1 hour before the end of cooking time. Serve on patty shells or white rice if you prefer.
