Midwestern Garden Salsa

Ingredients

  • 2 cup chopped cilantro
  • 2 yellow/white garden onions diced
  • 1 sweet onion
  • 15 tomatoes diced (TIP-if you dont have fancy chopper use the julienne attatchment of your mandolin grater and a silicone glove to dice perfectly)
  • 15 tomatoes pureed
  • 8 Green Bell peppers (diced)
  • 4 heads Garlic (minced)
  • 2 limes (squeezed)
  • 4 tbsp cumin seeds and black pepper corns(grind)
  • 2 jalepenos(optional)
  • 3 tbsp smoked paprika
  • 2 tbsp chili powder
  • salt to taste

Midwestern Garden Salsa

Time: 60 minutes prep, 20 minutes cook
Servings: 16 cups
 

Directions

  1. Blend all ingredients.
  2. Cook for about 20 minutes,pour into jars.
  3. Makes 2 quarts and 4 pints,water bath can for 20 minutes.
