This is a tasty and fairly inexpensive meal to make. I love Mexican inspired flavors and we are sour cream addicts at my house so of course it got served up with plenty on the side! Add a salad and it makes a nice little meal for four.

Ingredients

  • 6 cups tater tots
  • 2 5 oz cans tuna, drained
  • ½ cup salsa
  • 2 ½ cups shredded cheese

Directions

  1. Thaw tater tots on a plate in the microwave.
  2. Heat a 10” skillet over medium-high.
  3. Mix the drained tuna and salsa in a bowl.
  4. Spread the thawed tater tots in the skillet, breaking apart and pressing down to brown.
  5. Turn several times until well crisped.
  6. Take the back of a spoon and press tots down and up the sides of the pan to form a shell.
  7. Spread the tuna mix on the “shell” in the pan.
  8. Top with cheese and cover until melted.
