Hi everyone welcome to my new site. I am still doing a bit of unpacking and cleaning up, but this is it. I hope you like it as much as I do.

To go along with my new digs, I am hosting a giveaway. This is the William Sonoma book called Entertaining. I thought it would be an appropriate giveaway for this time of year.

Now that we got the preliminaries over with, on to my recipe

Meatloaf

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium vidalia onion
  • 3 tablespoons barbecue sauce
  • 2 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • meatloaf mix
  • 1/2 cup bread crumbs
  • 2 large eggs
  • 1/2 cup ketchup
  • 1/4 cup brown sugar

Directions:

Preheat oven to 325 degrees.

Heat the olive oil in a medium saute pan.

Add the onions and cook stirring occasionally until they are soft, about 5 minutes. Remove from heat.

Add the barbecue sauce and allow to cool slightly.

In a large bowl combine the salt, pepper, meatloaf mix, bread crumbs and eggs. Mix to combine. Place into a grease 9 inch loaf pan.

In a small bowl combine the ketchup and brown sugar. Spread over the top of the meatloaf evenly. Bake for 45 minutes to 1 hour. The internal temperature should read 160.

Note: a pan of water placed under the meatloaf makes it moist and delicious
