My mother is a health freak, and I grew up eating strained plain yogurt instead of mayo, sour cream, cream cheese. It actually tastes really good, and is a great way to reduce some calories and fat for you health conscious folk.

Directions

  1. Use a sifter and place it on top of a bowl
  2. Place a coffee filter in the sifter
  3. Fill the coffee filter until the yogurt has filled about 3/4 of the area provided by the filter or up to the amount you desire.
  4. Let it sit over night, and allow the natural liquid to drip out of the yogurt.
  5. Place the yogurt in a bowl, and add salt to taste.
  6. Once the mixture has reached the level of "saltiness" that you desire; place it in a jar or any fridge friendly container.
  7. Keep refrigerated, and enjoy!

This looks great and is basically what I want to do when I want to streamline the fat out but keep flavor in.

You can make some awesome flavored cheeses with this one!
