Matamoros Beef And Cheese Omelette Sandwich

Ingredients

  • 16 ounce grnd beef
  • 2 Tbsp. grnd cumin
  • 1 2/3 c. canned minced tomatoes
  • 6 Tbsp. Tabasco brand Pepper Sauce
  • 12 x Large eggs beaten
  • 1 c. grated Monterey Jack cheese
  • 12 x biscuits

Directions

  1. Saute/fry the grnd beef till it is cooked through. Add in the cumin, tomatoes, Tabasco brand Pepper Sauce and cook till the liquid is reduced, about five min. Hold hot for service.
  2. For each serving, ladle 2 ounces of the egg into a nonstick omelette pan and cook the egg omelette-style till it is set.
  3. Ladle 1 1/2 ounces of the grnd beef mix down the center of the omelette and top with 1/2 oz of the cheese. Fold the omelette in half, and then into quarters and place on a biscuit.
  4. This recipe yields 12 servings.
