Mantecada Recipe

Ingredients
- 1 lb butter
- 1 lb sugar
- 400 gm yellow corn flour
- 100 gm wheat flour
- 10 x Large eggs
- 3 tsp baking pwdr
- 4 shot aguardiente or possibly rum
Directions
- Preheat the oven to 350 degrees. Beat butter and sugar to a creamy consistency. Gradually incorporate Large eggs, one at a time. Add in the flour and the baking pwdr slowly to blend. Finally add in the aguardiente and mix thoroughly. Bake for 30-60 min in a baking pan.
