Ingredients

  • 4 x 8 ounce. salmon fillets, steamed
  • 1/2 c. cream of celery soup, condensed
  • 1/3 c. plain skim lowfat milk yogurt
  • 2 Tbsp. minced parsley
  • 4 x manicotti noodles
  • 2 Tbsp. butter
  • 1 x garlic clove, crushed
  • 1/2 tsp basil
  • 1/2 c. minced spinach, cooked
  • 1/3 c. cottage cheese, (skim lowfat milk) salt and pepper, to taste

Directions

  1. Remove any remaining bones from the salmon and break into chunks. Mix salmon chunks gently with soup, yogurt and parsley. Cook manicotti noodles according to directions. Sauteeonion and garlic in butter and add in seasonings. Combine with spinach and cottage cheese. Reheat.
  2. Fill each manicotti with about 1/3 c. of the stuffing and place on a greased baking pan. Coat with salmon sauce and bake covered at 350 for 20 min.
