Lemon Berry Angel Food Shortcake Recipe

Ingredients

• 1 1/3 cups icing sugar (powdered sugar)
• 2/3 cup all purpose flour
• 2/3 cup cake flour
• Beat to soft peaks:
• 12 egg whites at room temperature
• small pinch salt
• 3 tsp vanilla extract
• 1 1/2 tsp cream of tartar
• Gradually add, a couple of tablespoons at a time:
• Sift the dry ingredients over the beaten egg whites in four equal
• 2 cups whipping cream
• 4 tbsp icing sugar (powdered sugar)
• 2 tsp vanilla extract
• 2 cups fresh berries or diced fresh fruit
