Make-over Spaghetti & Shrimp Salad by Salad FoodieOriginally mayo was the dressing for this salad recipe from a friend long ago, but I decided to give it a make-over. Adding a few new veggies and seasonings, and subbing an oil-based dressing, made it lighter and brighter. The recipe makes enough for a crowd or potluck, so cut down by one third or two thirds if needed. |

Gnocchi by J. Gino GenovesiIf you have never had gnocchi, you are in for a great dish. I refer to my dish as Gnocchi even though the dough contains no potatoes.. Many areas refer to this dish as Cavetelli. What ever they are called, they are a superior meal. When ever my children come home or during Easter and Christmas, this is what they ask for.… |

Grandmother’s Handkerchief & Sausage Soup (Fazzoletto di nonna e la zuppa di salsiccia) by Windle GrissettA friend of mines mom was making pasta sheets, which I thought was to be for ravioli or manicotti crepes. My pasta choice for this is ditalini, a small pasta often used in soups (this can be hard to locate but Barilla sells a one pound box.) Or substitute your own small pasta FAV such as elbows or shells. |
