-%20basically%20%22re-claiming%22%20my%20house%20before%20my%20Christmas%20break%20draws%20to%20a%20close.%20And%20now,%20as%20school%20clothes%20are%20laid%20out%20and%20backpacks%20and%20lunches%20are%20packed%20for%20the%20first%20day%20back%20after%20a%20lovely%20break,%20it%20is%20finally%20time%20for%20me%20to%20share%20a%20recipe%20with%20all%20of%20you.%3C/p%3E%3Cp%3EI%20found%20this%20recipe%20for%20Four-Cheese%20Pimento%20Dip%20in%20the%20December%202010%20edition%20of%20Better%20Homes%20and%20Gardens%20magazine.%20I%20thought%20that%20it%20would%20make%20a%20nice%20mid-day%20snack%20on%20Christmas%20day%20between%20our%20big%20breakfast%20and%20the%20%22fancy%22%20candlelight%20Christmas%20dinner.%3C/p%3E%3Cp%3EAs%20I%20mixed%20up%20the%20ingredients%20late%20on%20Christmas%20Eve,%20I%20decided%20that%20the%205%20cups%20of%20dip%20would%20make%20excellent%20cheese%20balls,%20and%20so%20I%20divided%20the%20mixture%20into%203%20parts,%20formed%20it%20into%20balls,%20and%20chilled%20the%20balls%20until%20they%20were%20ready%20to%20be%20served.%3C/p%3E%3Cp%3ERolled%20in%20crisp%20bacon%20and%20chopped%20green%20onion,%20this%20cheese%20ball%20was%20a%20huge%20hit.%20We%20ate%20one%20on%20Christmas,%20I%20served%20the%20second%20at%20our%20New%20Year's%20Eve%20party,%20and%20no%20doubt%20we%20will%20polish%20off%20the%20final%20cheese%20ball%20at%20my%20daughter's%204th%20birthday%20party%20this%20weekend.%20These%20cheese%20balls%20are%20nice%20to%20keep%20in%20the%20fridge%20for%20an%20easy%20snack%20while%20entertaining%20holiday%20guests.%20And%20thinking%20ahead%20for%20next%20year,%20they'd%20make%20great%20gifts%20too!%3C/p%3E%3Cp%3EHere's%20how%20it%20all%20came%20together:%3C/p%3E%3Cp%3EFirst,%20I%20beat%203%20oz.%20of%20cream%20cheese%20for%2030%20seconds.%3C/p%3E%3Cp%3EThen%20I%20added%20in%20the%20other%203%20cheeses:%20sharp%20cheddar,%20extra%20sharp%20white%20cheddar,%20and%20a%20good%20Swiss.%20The%20recipe%20called%20for%20Gruyere,%20but%20that's%20a%20little%20pricey...%3C/p%3E%3Cp%3ENext,%20I%20added%20mayonnaise,%20diced%20pimentos,%20finely%20chopped%20onion%20and%20jalapeno,%20Worcestershire%20sauce,%20and%20cayenne%20pepper.%3C/p%3E%3Cp%3EBeat%20until%20well%20combined.%3C/p%3E%3Cp%3EI%20divided%20the%20cheese%20mixture%20into%20three%20portions.%20I%20dropped%20each%20portion%20onto%20a%20piece%20of%20plastic%20wrap,%20then%20formed%20them%20into%20a%20ball,%20using%20the%20plastic%20as%20a%20barrier%20so%20that%20my%20hands%20didn't%20get%20messy.%3C/p%3E%3Cp%3EThe%20wrapped%20cheese%20balls%20went%20into%20the%20fridge%20to%20chill.%3C/p%3E%3Cp%3EThen%20I%20fried%20up%20some%20bacon.%3C/p%3E%3Cp%3EAnd%20crumbled/chopped%20it%20into%20little%20bits.%3C/p%3E%3Cp%3EI%20combined%20the%20bacon%20with%20some%20chopped%20green%20onion%20in%20a%20shallow%20dish...%3C/p%3E%3Cp%3EThen%20rolled%20the%20cheese%20ball%20around%20to%20coat%20it.%3C/p%3E%3Cp%3ETo%20serve,%20I%20plopped%20the%20cheese%20ball%20into%20a%20bowl%20and%20arranged%20some%20crackers%20around%20it%20on%20a%20serving%20plate.%20We%20preferred%20butter%20crackers%20and%20wheat%20crackers%20(not%20pictured)%20as%20a%20way%20to%20transport%20this%20delicious%204-cheese%20concoction%20into%20our%20mouths.%3C/p%3E%3Cp%3EHere's%20a%20closer%20look...%3C/p%3E%3Cp%3EAnd%20that%20first%20delicious%20bite!%3C/p%3E%3Cp%3EI%20think%20that%20the%20reason%20we%20enjoyed%20this%20cheese%20ball%20so%20much%20is%20because%20it%20combined%20elements%20from%20many%20of%20the%20cheese%20ball%20recipes%20that%20we%20enjoy.%20This%20one%20has%20it%20all...%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EIn%20bowl%20beat%20cream%20cheese%2030%20seconds.%20gradually%20beat%20in%20other%20cheeses.%20Beat%20in%20mayonnaise.%20Stir%20in%20pimientos,%20sweet%20pepper%20onion,%20jalapeno,%20Worcestershire,%20and%20cayenne.%20Divide%20the%20pimiento%20cheese%20into%203%20portions.%20Transfer%20to%20plastic%20wrap%20and%20shape%20into%20balls.%20Chill.%20Roll%20in%20crumbled%20bacon%20and%20finely%20chopped%20green%20onions%20before%20serving.%20Serve%20with%20dippers.%3C/p%3E%3Cp%3EFrom%20the%20Test%20Kitchen%3C/p%3E%3Cp%3E%E2%80%A2Tip%20*Hot%20chile%20peppers,%20such%20as%20jalapenos,%20contain%20oils%20that%20can%20burn%20your%20skin%20and%20eyes.%20When%20working%20with%20them,%20wear%20plastic%20or%20rubber%20gloves.%20If%20using%20bare%20hands,%20wash%20hands%20well%20with%20soap%20and%20water%20after%20working%20with%20the%20peppers.%3C/p%3E%3Cp%3ENutrition%20Facts%20(Four-Cheese%20Pimiento%20Dip)%3C/p%3E%3Cp%3ECalories%20220,Protein%20(gm)%208,Carbohydrate%20(gm)%203,Fat,%20total%20(gm)%2020,Cholesterol%20(mg)%2039,Saturated%20fat%20(gm)%208,Monosaturated%20fat%20(gm)%203,Polyunsaturated%20fat%20(gm)%206,Dietary%20Fiber,%20total%20(gm)%201,Sugar,%20total%20(gm)%201,Vitamin%20A%20(IU)%20680,Vitamin%20C%20(mg)%209,Thiamin%20(mg)%200,Riboflavin%20(mg)%200,Niacin%20(mg)%200,Pyridoxine%20(Vit.%20B6)%20(mg)%200,Folate%20(%C2%B5g)%2020,Cobalamin%20(Vit.%
