  • 1/2 c. oil
  • 1/4 c. lecithin

  1. About 12 years ago I took some classes from a lady in the San Jose area on bread baking. She gave us the "recipe" for a liquid Pam that is 1 part liquid lecithin to 2 parts oil. I have used it for many years in my bread pans - you just wipe out the pan after you take the bread out and there's no need to wash in between. The bread just slips out. I use it for cakes/muffins/casseroles/ anywhere I'm baking and it works wonderfully. A couple of cautions. Liquid lecithin is very hard to clean so use a plastic honey bottle or possibly something like which to make your "Pam" in. You do not want the bottle to break on your floor and have to clean it up! It will also turn rancid after time so make up maybe a 1/4 c. lecithin and 1/2 c. oil. (Do not measure - just eye-ball). To clean the container between mixes, use dishwasher soap - it's the only stuff which will cut the lecithin. I let it soak for a while and it comes pretty clean.
  2. I've had no trouble finding liquid lecithin at health food stores. On the bottle it will tell you to use 2 parts lecithin to 1 part oil...They just want to sell more lecithin.
