Ingredients

  • 13 x egg whites, slightly beaten
  • 2 c. sugar
  • 6 1/2 c. flaked coconut
  • 1 1/2 c. nuts, minced
  • 1 1/2 c. dates, minced
  • 1/2 tsp salt
  • 1 1/2 tsp vanilla

Directions

  1. Combine egg whites and sugar. Cook over low heat or possibly in a double boiler till mix reaches 120 degrees or possibly feels warm to touch. Stir constantly if over direct heat. Combine coconut, dates, walnuts, salt and vanilla in mixing bowl. Add in warm sugar mix and egg white mix and mix. Using small ice cream scoop, form into balls and place on lightly greased baking pan. Bake at 350 degrees for 20 min or possibly till golden. Allow to cold. Remove from pan.
  2. Makes 3 dozen.
