%20was%20Portobello%20Mushroom%20Burgers.%20I've%20made%20these%20a%20few%20times%20before,%20and%20my%20favourite%20version%20combines%20wonderful%20ingredients%20such%20as%20goat%20cheese,%20prosciutto,%20asparagus,%20and%20even%20peaches.%20Yesterday%20I%20thought%20I'd%20try%20a%20Mexican-inspired%20version,%20so%20here's%20what%20I%20came%20up%20with:%3C/p%3E%3Cp%3EMEXI-MEATLESS%20BURGER%3C/p%3E%3Cp%3ESoak%20the%20mushrooms%20in%20beer%20and%20then%20grill%20on%20the%20bbq%20for%205%20minutes%20on%20each%20side.%20Toast%20buns%20on%20the%20grill%20(mushroom%20burgers%20can%20be%20quite%20soggy,%20so%20toasting%20the%20bun%20is%20a%20crucial%20step!)%20Combine%20remaining%20ingredients.%20Set%20one%20mushroom%20on%20each%20bun%20and%20top%20with%20cheese%20mixture,%20along%20with%20any%20other%20toppings%20you%20like%20(I%20put%20lettuce,%20tomato,%20and%20avocado.)%3C/p%3E%3Cp%3EPersonally,%20I%20much%20prefer%20my%20other%20recipe%20with%20the%20prosciutto%20and%20asparagus.%20But%20these%20were%20pretty%20good,%20and%20my%20daughter%20thought%20they%20were%20great%20(she%20didn't%20have%20any%20of%20the%20cheese%20mixture%20on%20top.)%20My%20son%20basically%20went%20to%20bed%20hungry%20because%20he%20refused%20to%20try%20even%20the%20teeny%20tiniest%20bite%20of%20mushroom.%20Needless%20to%20say,%20he%20was%20not%20thrilled%20when%20I%20whipped%20up%20some%20more%20veggie%20burgers%20for%20lunch%20today,%20this%20time%20using%20a%20Nutty%20Lentil%20Burger%20Recipe%20from%20Epicure.%3C/p%3E%3Cp%3EI%20used%20sunflower%20seeds%20(but%20no%20nuts)%20and%20I%20used%20dry%20lentils%20that%20I%20soaked%20overnight%20and%20then%20boiled%20for%20about%2030%20minutes%20in%20the%20morning.%20I%20thought%20they%20were%20delicious%20(I%20ate%20two%20of%20them%20for%20lunch!),%20and%20by%202pm%20my%20son%20thought%20they%20were%20weren't%20so%20bad%20either.%20(He%20knew%20I%20was%20dead%20serious%20when%20I%20said%20he%20had%20to%20try%20at%20least%20one%20bite.%20He%20ended%20up%20having%203%20fairly%20big%20bites,%20and%20then%20I%20gave%20him%20his%20beloved%20peanut%20butter%20sandwich.)%3C/p%3E){kind=link}
