Grilled Garlic Chicken with Bell Peppers

Ingredients

  • 1 cup Italian salad dressing
  • 1 tablespoon fresh rosemary, chopped
  • 2 large garlic cloves, coarsely chopped
  • 6 chicken breast halves, skin, boned
  • 1 red bell pepper, quarter long
  • 1 green bell pepper, quarter long
  • 1 yellow bell pepper, quarter long

Grilled Garlic Chicken with Bell Peppers

Time: 120 minutes prep, 10 minutes cook
Servings: 6
 

Directions

  1. Whisk the Italian dressing, rosemary, and garlic in large bowl.
  2. Add chicken and all three bell peppers and toss to coat evenly.
  3. Let the chicken marinade for about two hours or cover and chill for up to 1 day. You may frequently toss the marinading chicken to ensure that it absorbs as much flavor.
  4. Prepare and heat the grill with medium heat. Drain the liquid marinade and remove the chicken.
  5. Grill the chicken and bell peppers until just cooked through. This should take about 5 minutes per side, or until brown and tender.
  6. Serve the chicken on a platter and enjoy!
