Green Curry Flounder

Ingredients

  • 2 lbs. flounder
  • 1 tbsp. canola or vegetable oil
  • 1 green and 1 red pepper, sliced thin
  • 1 large onion sliced thin
  • 1 tbsp. fish sauce* (see note below)
  • 1-2 tbsp. green curry paste (more or less depending upon how spicy you like it)
  • 1 (13 oz.) can lite or regular coconut milk
  • salt and pepper, to taste
  • 1 lime, sliced
  • 2 tbsp. cilantro, chopped

I really love the flavors of Thai cuisine especially the curry pastes. I have also been eating a lot of fish and seafood lately as it's so healthy. Here is a recipe for Green Curry Flounder that will not only taste great but cook up in no time!

Green Curry Flounder

Serves 4-5

Ingredients

  • 2 lbs. flounder
  • 1 tbsp. canola or vegetable oil
  • 1 green and 1 red pepper, sliced thin
  • 1 large onion sliced thin
  • 1 tbsp. fish sauce* (see note below)
  • 1-2 tbsp. green curry paste (more or less depending upon how spicy you like it)
  • 1 (13 oz.) can lite or regular coconut milk
  • salt and pepper, to taste
  • 1 lime, sliced
  • 2 tbsp. cilantro, chopped

Directions

Preheat oven to 350 degrees

In a large non stick skillet over medium heat, heat the oil and stir fry the onions and pepper until tender-crisp. Add the curry paste and the fish sauce. Cook and stir until the paste dissolves into the vegetables. Add the coconut milk and bring to a boil. Once boiled, turn off the heat.

Place the flounder in a baking dish and add salt and pepper to both sides. Add the vegetable curry sauce to the flounder. Bake the flounder for 15 minutes or until fish is cooked. Serve with lime slices and cilantro. Note: Fish sauce smells absolutely horrible but if you want to make any sort of South East Asian cuisine, you must use it. It just gives the food so much flavor and you will not taste the fish. Just hold your nose when adding it to the food....LOL!!!
